Stuffed Jacket Potatoes
(This recipe is for Microwave cooking)



Ingredients
4 medium potatoes
100 g cooked ham, finely diced
3 tblsp chives, snipped
2 tblsp parsley, finely chopped
50 g butter or margarine
1 cup grated cheddar cheese
freshly ground black pepper

Method
Scrub, rinse and pat dry the potatoes.
Prick the skins 2 - 3 times.
Lay a sheet of absorbent kitchen paper on a microwave dish and place the potatoes on top (arrange evenly).
Cover loosely (non-waxed kitchen paper), and cook on High for 8 -10 minutes.
Allow to cool slightly.
Cut the top off each potato and scoop out the centre (leaving about 1 cm around the skin) into a bowl.
Mash the potatoes in the bowl and add all the other ingredients. Then, spoon the filling back into the potato shells.
Place the stuffed potatoes on a microwave dish and cook on High for 2 - 3 minutes.
