BRATKARTOFFELN

 (A traditional german dish)  

serves 3

Ingredients:

8 medium potatoes
1 large onion
100g diced bacon
Margarine or butter
3 eggs

Peel, cut in half and thinly slice potatoes.
Onion to be chopped very fine.
Heat butter or margarine in frypan.
Add chopped onion and fry until transparent.
Add diced bacon, stir and mix.
Add sliced potatoes, cook on medium heat while frequently turning and mixing.
When potatoes are cooked and brown, serve onto plates.
Fry eggs and add onto top of potatoes.


Variation: Instead of frying the eggs separately, mix into potatoes
just before serving.
